Le Grand Bé

In the heights of intra muros Saint-Malo, Le Grand Bé has a multi- faceted appeal: a spa under a vaulted ceiling, all-day gourmet fare, and a new rooftop with a view on the tidal island of Grand Bé. “We’re in a quiet area, away from the tourist hustle and bustle, but steps from the ramparts and the Bon Secours beach,” says Marc Scognamiglio, manager of Le Grand Bé (and of the Royal Émeraude in Dinard). Cozy treatment rooms, signature cocktails, and Sunday brunch: in a matter of years, the site has undergone a high-end conversion from tax office to 4-star hotel. With 56 rooms bathed in light, a vast south-facing terrace on one of the rare tree-lined spots intra muros, and a bar–lounge stretching across the ground floor, everything is designed for your wellbeing. Even your arrival is seamless thanks to a private parking lot with charging ports.

Between heaven and earth, L’Éphémère is the new rooftop terrace of Le Grand Bé as of June 2025. “There are few places in the city center where you can lunch, dine, or have a drink while admiring the sea,” says Lise Rudio Dupuy, second-in-command to Marc Scognamiglio, manager of Le Grand Bé. Summer is kicking off with an exclusive partnership with Atelier Morisseau in Dinard, known for its ultra- fresh seafood. Far from traditional platters, they blend hot and cold, raw and cooked: Cancale oysters, mussels, clams, crab, and lobster, according to daily arrivals. It’s meant to be cozy: 20 covers per service, by reservation only, with just one menu to ensure the freshness of the ingredients. And this collaboration is only the beginning. Designed to adapt, L’Éphémère is proving itself a site of gastronomic and festive experimentation.

As of 2025, it’s no longer necessary to book in advance or fit your appetite around fixed opening hours: at Le Grand Bé, you can treat yourself to a meal almost anytime. “Once guests check in, they immediately go exploring in town. We came up with a new food service that followed their rhythm rather than a more conventional restaurant like we had before,” says Marc Scognamiglio. The premium snack menu is served morning to evening, in your room, on the terrace, or in the bar–lounge. Sunday brunch is served in the breakfast room from 11:30am to 1:30pm. Gourmet platters, avocado-hummus toast, truffle toasties, and nibbles: all in the name of flexibility, quality, and enjoyment.

Under the 18th-century vaulted ceiling of Le Grand Bé, in subtle contrast to the 50s architecture and contemporary design of the hotel, is the Phytomer spa. Here, emotions, fragrances, and custom treatments come together in harmony. The spa includes three cozy treatment rooms, a sauna, and a lounge, and offers Phytomer regimens inspired by the sea. In 2025, the spa is adding treatments by Altearah, “a brand from Provence rooted in emotions and colors,” says Marc Scognamiglio, hotel manager. “It’s a unique concept: you choose a tint according to your state of mind, and the entire service is personalized with products to match.”
