On the Savignac Boardwalk, Aquarius is fast becoming the sunny spot in Trouville-sur-Mer. At the helm is Franck Sannier, who has turned this 1930s-era building into a relaxed, welcoming brasserie. Located inside the former aquarium, Aquarius is fast “becoming more and more a real beach restaurant. As soon as there’s a ray of sunshine, everyone thinks of us,” says Franck. The sunny terrace, with its palm trees and roomy tables, attracts regulars as well as newcomers who arrive for happy hour under the setting sun and who stay for dinner under a magical evening sky. On the menu are fresh ingredients, homemade dishes, seafood, risottos, and desserts. In the front-of-house, his son Pierre-Henri is embodying the next generation of the building’s caretakers. Aquarius can also be rented out for private events.
