Since its creation in 2022 inside the former Trouville aquarium, this brasserie has cemented its status as a must in town. It was recently taken over by Pierre-Henri Sannier, one half of a dynamic duo along with Maxime Aubert, who became the chef at only 27 years old. “We move the brasserie forward together,” says Pierre- Henri. Their entire menu is made from scratch, adding contemporary flair to classic dishes like octopus and eggplant caviar, tuna in tomato sauce and piperade, crab with avocado and mango, and fresh-catch specials.
