Maison Bleue

In the oldest house of Beaumont-en-Auge, Maison Bleue is starting a delicious new chapter. After lending their talents to the Plaza Athénée, among others, trained pastry chefs Éva Kimm and Paul Delalande are reviving this emblematic address. One day, Paul’s parents saw a For Sale sign on the old chocolate shop and told Éva and Paul about it. So the couple visited the 16th-century building and could immediately picture their next business there. After more than a year of work, Maison Bleue reopened in April 2026 to the delight of local residents. Éva makes the desserts while Paul handles the bread and pastries: “I like how they look simple, but you only know if they turned out once they’re baked.” The ingredients are chosen with care: Norman wheat, farm fresh eggs, local fruits, and high-end chocolate and vanilla. “We want our customers to enjoy a sourdough or a pastry as much as they enjoy the atmosphere here,” says Éva. Soon, they will extend the shop upstairs with a tearoom.
