Coquilles Club
In Saint-Samson-sur-Rance, Thomas Gimbert and Claire Byache have created Coquilles Club, dedicated to oysters and teeming with creativity. “After 15 years in Peru as an architect, I needed to do something concrete, to work with my hands. Oyster-farming was my dream as a child,” says Thomas. After training, in 2022 he took over oyster beds that had “gone to seed.” Since then, he has been producing “ultra plump, gourmet” oysters. He and Claire, an ex-journalist who became an author, then acquired and converted an old barge. Now, “all year round, you can buy or taste oysters and clams, order seafood platters, or privatize the space for events,” says Thomas. Enjoy chefs-in-residence, a large terrace, all-day service, dishes to share, stuffed clams, scallops to snack on, home-smoked tuna, and exceptional ceviche. “Coquilles Club is also an energy source,” says Claire, who has soaked it in her poetic world of free books, writing workshops, poetry readings, and acoustic concerts.
