Nestled in the rolling hills among the hedgerows and streams is the Distillerie des Ambres. The family business has its roots in Françoise Schlumberger Primat’s fierce attachment to this land. Three generations later, her grandchildren uncovered an unexpected inhe- ritance in a cellar: 20,000 liters of unsold calvados. They chose to keep them for a new distillery, restoring and extending the orchards over seven years. Today, 86 acres of organic farmland form the bucolic landscape, where cattle are raised for beef. With preserved hedge- rows, small plots, and diverse varieties, they have “reestablished the traditional Norman ecosystem, cited as a model for agroecology,” says Kristen Paravisini, the head of the estate since 2008. A tight-knit team maintains the orchards, ferments the apples, distills, and blends them for a global clientele. Ideally located on the Route du Cidre, the distillery offers tours, tastings of calvados, pommeau, cider, and apple juice, and dinners by local chefs.
