– Behind an elegant façade in Cabourg sits the union of Charlotte Schwab, a sommelière from the South, and Charles-Antoine Jouxtel, a chef from Normandy. After careers in Michelin-starred restaurants, they wanted to create their own establishment. In 2023, they fell in love with Cabourg and transformed an art gallery into a gastronomic setting with a fitting name: Symbiose. “It’s our shared vision of the front and back of the house working together.” On one side is a tapas bar; on the other, a gastronomic dining room. In the kitchen, Charles-Antoine revisits Norman fare with finesse, like chicken à la crème inspired by his grandparents. In the dining room, Char- lotte proposes personalized pairings with almost 400 wines. “Everything must work together, from what’s in the glass to what’s on the plate,” she says. “But we don’t stay in our comfort zone!” With a Michelin star and other national distinctions, plus a talented team of 18, Symbiose delights without ever compromising on excellence.
