At 33, Clément Ponseel of Trouville is transforming at-home dinners into private gastronomic experiences. “I love coming into a family kitchen and creating a menu that tells a story,” he says. For 8 to 30 people, he makes dishes from scratch, blending tradition and ingenuity. His menus, finalized a week ahead according to his whims and the freshest produce available, become cozy, unforgettable meals. “To see the surprised looks when a recipe delivers magic lights me up.” Trained at 14, Clément developed his eye for detail with stints at prestigious establishments in Deauville, Paris, and London, and has cooked all over the world thanks to a decade of travels that nourished his craft. With his brazier, Clément lights up barbecues, garden parties, and corporate events for up to 200 people. “The brazier is my play- ground: flames, smoke, and aromas create memorable family-style dishes,” he says. Meat, fish, vegetables, fruit... all is fair game in a festival of flavors.
