At its head, Franck Sannier has a vision for his restau- rant: evolution with a purpose. “We are keeping the strengths while impro- ving elsewhere,” he says. This year, the terrace is transforming with a theme inspired by Coco Chanel: black and white lines, outdoor benches, and a more fluid décor create a chic seaside atmosphere, designed to bridge the gap between lunch and appetizers. The kitchen is home to a signature cuisine with emblematic dishes like the famous seafood sauerkraut. New items include tapas and a daily special, served all afternoon. “Enjoy something new in your plate, all while keeping the classics,” says Franck.
