– Facing the sailboats on Deauville Marina, Honorine is showing off a refined allure this season. In 10 years, this Deauville brasserie has become a must on the docks. At its head, Franck Sannier has a vision for his restau- rant: evolution with a purpose. “We are keeping the strengths while impro- ving elsewhere,” he says. This year, the terrace is transforming with a theme inspired by Coco Chanel: black and white lines, outdoor benches, and a more fluid décor create a chic seaside atmosphere, designed to bridge the gap between lunch and appetizers. The kitchen is home to a signature cuisine with emblematic dishes like the famous seafood sauerkraut. New items include tapas and a daily special, served all afternoon. “Enjoy something new in your plate, all while keeping the classics,” says Franck. The service is flexible and attentive without being ostentatious. Through its reinvention, Honorine remains loyal to itself, always bathed in the same soft light on the port.
