L'Évéché
Julien Ferret and his partner, Maïlys, took the reins of restaurant L’Évêché in July 2024. Trained by Michelin-starred chefs, Julien lets the flavors of ingredients speak for themselves. He works with local producers, like the fisherman in Saint-Malo and a gardener in the polders. The menu changes monthly with 5 appetizers, 5 dishes, and 5 desserts, always with a vegetarian option, and with generous portions. In the dining room, Maïlys pairs the dishes with good wine, often recommended by the two cellarmen in Dol. The restaurant also offers event catering, onsite or elsewhere, for weddings, birthdays, and more. Julien cares most about creating connection: “A restaurant is a neighborhood affair. It’s about family, friends, everyone. When they come back, we know we’ve succeeded.”
