In Blainville-sur-Mer, Annabelle Marcellin-Quetier opened Les Blainvillais in July 2023. In this crêperie, buckwheat pancakes (called galettes) are canvases for gustatory and aesthetic expression. Annabelle designed her new crêperie with a cozy clubhouse vibe: “I had bought the land, and I dreamed of opening a crêperie. Buckwheat galettes are magical because they can be sweet or savory!” In the kitchen, Chef Mathis Rigot makes galettes like an artist. One is made with feta, roasted vegetables, and tapenade, topped with an egg. Local, seasonal ingredients, creativity, and passion: such are the core values of the business, also a family affair. Their bestselling galette is named after Annabelle’s niece Margot, who joins the team every summer. You’ll come back for the warm welcome, the flavor, and the visual finesse of the dishes.
