On a small paved street in Honfleur, the Pollen bakery sits like a gingerbread house, bustling all day. Caroline Guyon, a pastry chef who trained with big names in gastronomy, brings an eye for detail to her homemade pastries and cakes to order. “I work as much as possible with local, seasonal ingredients,” she says, welcoming foodies for breakfast, weekend brunch, and afternoon tea. The Parnell bistro in Cambremer, whose owners have incredible talent!

I have several: my parents, without whom Pollen would still be just a dream; and my team, who are at my side every day with passion and commitment.

What is your favorite dish?
My father’s leek-and-scallop pie.
